1 big cabbage
1tbsp salt
1 package (250g) unflavored Härkis
2dl barkley
1 onion
200g carrot
syrup
2dl vegetable broth
1tsp dried thyme
1tsp dried rosemary
1tsp black pepper
Salt
50g butter
1. Bring a large pot of water to a boil and salt the water well.
2. Remove the stem from the cabbage and add the whole cabbage into the boiling water. Let it cook for 20 minutes to soften it.
3. Once the cabbage is soft, let it cool and carefully peel leaves from the head.
4. Boil the barley according to the instructions on the package. You can also use rice or oats.
5. Wash, peel and grate the carrot. Chop the onion.
6. Heat a drizzle of oil in a pan and add the carrots, onion, Härkis and barley. Stir well and let simmer for 10 minutes on medium heat.
7. To make the rolls, take the cabbage leaves one at a time and put a teaspoonful of the filling on each leaf. Now fold in the sides and roll up the cabbage placing seam side down on to a pan. Continue until the filling or the cabbage leaves run out.
8. Add the butter to the pan and heat over medium heat. Pour the vegetable stock into the pan.
9. Mix together the syrup and 0,5dl of hot water. Pour the liquid over the cabbage rolls. Cover the pan with a lid and let the rolls simmer on low heat for 1-1,5 hours.
10. Make sure that the liquid doesn't evaporate from the pan. You can turn the rolls around halfway through so they don't burn.
